Dry Ingredients
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
¼ teaspoon baking soda (optional, extra fluff)
¼ teaspoon salt
Wet Ingredients
1 large egg, room temperature
¾ cup milk (whole or low-fat)
2 tablespoons unsalted butter, melted and slightly cooled
Festive Flavor Options (Choose 1–2)
½ teaspoon vanilla extract
¼ teaspoon ground cinnamon
Pinch of nutmeg or cardamom
1 teaspoon fresh orange zest
For Cooking & Serving
Butter or oil for the pan
Maple syrup or honey
Powdered sugar (optional)
Fresh fruit, whipped cream, or nuts (optional)
Instructions
1️⃣ Prepare the Batter
In a medium bowl, whisk together:
Flour
Sugar
Baking powder
Baking soda (if using)
Salt
In a second bowl, whisk:
Egg
Milk
Melted butter
Vanilla or chosen spices
2️⃣ Combine Gently
Pour the wet ingredients into the dry ingredients.
Stir gently with a spoon or spatula until just combined.
The batter should be slightly lumpy — do not overmix.
Overmixing makes pancakes dense instead of fluffy.
3️⃣ Rest the Batter (Secret Tip )
Let the batter rest for 5–10 minutes.
This allows the flour to hydrate and makes the pancakes softer and taller.
4️⃣ Cook the Pancakes
Heat a non-stick pan or griddle over medium heat.
Lightly grease with butter or oil.
Pour about ¼ cup batter for each pancake.
Cook until:
Small bubbles form on the surface
Edges look set (about 1½–2 minutes)
Flip and cook the other side for 1–1½ minutes until golden.
5️⃣ Serve with Warmth
Stack the pancakes high.
Top with:
A pat of butter
Warm maple syrup
A dusting of powdered sugar
Serve immediately — best enjoyed hot and shared.
