Spinach Garlic Mozzarella-Stuffed Meatballs

A golden, tender meatball packed with garlicky spinach and a molten mozzarella center—pure comfort in every bite.

 

 

 

Ingredients (Serves 4–6)

For the Meatballs:

500 g ground beef or ground chicken

1 cup fresh spinach, finely chopped (sautéed & squeezed dry for best flavor)

2 garlic cloves, minced

1 small onion, very finely chopped (optional but recommended)

1 large egg

½ cup breadcrumbs (or panko)

¼ cup grated Parmesan cheese (optional, adds richness)

1 tsp salt

½ tsp black pepper

½ tsp paprika or Italian seasoning

2 tbsp milk (keeps meatballs juicy)

For the Filling:

Mozzarella cheese, cut into small cubes

(Use low-moisture mozzarella so it melts without leaking too much)

For Cooking:

2–3 tbsp olive oil

Optional Sauce (Choose One):

2 cups tomato sauce or marinara

OR 1½ cups chicken or beef broth

 

 

 

Step-by-Step Instructions

1️⃣ Prepare the Spinach

Heat a small pan with a drop of olive oil.

Sauté spinach for 1–2 minutes until wilted.

Let cool slightly, then squeeze out excess liquid and chop finely.

2️⃣ Make the Meat Mixture

In a large bowl, combine:

Ground meat

Chopped spinach

Garlic

Onion

Egg

Breadcrumbs

Parmesan (if using)

Salt, pepper, paprika

Milk

Mix gently with your hands until just combined. Do not overmix or the meatballs will be tough.

3️⃣ Stuff the Meatballs

Take about 1½ tablespoons of meat mixture.

Flatten slightly in your palm.

Place a mozzarella cube in the center.

Wrap the meat around it and roll into a smooth ball.

Repeat until all mixture is used.

4️⃣ Pan-Fry Until Golden

Heat olive oil in a wide skillet over medium heat.

Add meatballs in batches.

Sear, turning gently, until browned on all sides (about 6–8 minutes).

5️⃣ Simmer to Finish

Choose your finish:

Tomato Sauce Option

Pour tomato sauce over the meatballs.

Cover and simmer on low heat for 12–15 minutes.

Broth Option

Add broth to the pan.

Cover and simmer gently for 10–12 minutes.

Meatballs should be fully cooked and juicy inside, with melted mozzarella.
