Greek Feta & Cucumber Bite Skewers

Fresh, vibrant, and irresistibly Mediterranean — perfect for parties, holidays, or elegant appetizer boards.

 

 

 

Ingredients (Makes about 20–24 skewers)

1 large cucumber, sliced into thick rounds (about ½ inch thick)

8 oz block feta cheese, cut into bite-size cubes

1 cup cherry tomatoes (whole or halved if large)

½ cup Kalamata olives (pitted)

2 tbsp extra virgin olive oil

1 tsp dried oregano

1 tbsp fresh dill, finely chopped (optional but recommended)

Salt, to taste

Freshly cracked black pepper, to taste

20–24 small skewers or sturdy toothpicks

 

 

 

Instructions

1️⃣ Prep the Ingredients

Wash and dry the cucumber and tomatoes.

Slice cucumber into thick, even rounds (this will act as the base).

Cube the feta into pieces similar in size to the cucumber rounds.

If tomatoes are large, slice them in half.

Pat feta gently with a paper towel to remove excess moisture.

2️⃣ Assemble the Skewers

Layer in this order for stability and presentation:

Cucumber round (base)

Feta cube

Cherry tomato

Kalamata olive (on top)

Insert the skewer straight down through the center to secure everything.

3️⃣ Season

Arrange skewers on a serving platter.

Drizzle evenly with:

Olive oil

Sprinkle dried oregano

Add chopped fresh dill (if using)

Finish with cracked black pepper

Taste one and add a tiny pinch of salt only if needed (feta and olives are already salty).

Chill (Optional but Recommended)

Refrigerate for 20–30 minutes before serving to let the flavors meld.

 

 

 

 

Serving Tips

Serve with warm pita triangles and hummus.

Add a light squeeze of fresh lemon juice for brightness.

For a spicy twist, sprinkle with red pepper flakes.

Want extra flavor? Marinate the feta cubes in olive oil, oregano, and dill for 1 hour before assembling.

Make-Ahead Tip

You can assemble these up to 4 hours in advance. Store covered in the refrigerator and drizzle olive oil just before serving for best freshness.
