Ice Cream Sandwich Cake
This Ice Cream Sandwich Cake is one of the easiest no-bake desserts you can make. With layers of ice cream sandwiches, rich hot fudge, fluffy whipped topping, and crunchy cookie crumbs, it’s the perfect treat for birthdays, parties, or hot summer days. It takes only a few ingredients and a few minutes to assemble!
Ingredients
12–16 ice cream sandwiches
1 jar (about 12 oz / 340 g) hot fudge sauce
1 container (8 oz / 225 g) Cool Whip or other whipped topping
1 cup crushed chocolate cookies or Oreo crumbs
Optional toppings
Chocolate chips
Caramel sauce
Sprinkles
Chopped nuts
Instructions
Prepare the pan
Lightly drizzle some hot fudge sauce on the bottom of a 9×13 inch baking dish.
First layer
Arrange a single layer of ice cream sandwiches over the fudge, placing them side by side to cover the bottom.
Add toppings
Spread a layer of hot fudge sauce over the sandwiches.
Then spread half of the Cool Whip evenly on top.
Second layer
Add another layer of ice cream sandwiches over the whipped topping.
Repeat the layers
Drizzle more hot fudge sauce and spread the remaining Cool Whip over the top.
Add cookie crumbs
Sprinkle the crushed cookies evenly over the cake.
Freeze
Cover the dish and place it in the freezer for at least 3–4 hours, or until firm.
Serve
Just before serving, drizzle extra hot fudge sauce over the top. Slice and enjoy!
Tips
Let the cake sit 5–10 minutes at room temperature before cutting so it slices easily.
You can use caramel sauce or peanut butter sauce instead of fudge for a different flavor.
Store leftovers covered in the freezer for up to 1 week.
