This hearty skillet meal brings together smoky sausage, tender baby potatoes, and crisp green beans in a rich honey garlic glaze. Ingredients
1 lb smoked sausage, cut into bite-size pieces
1 lb baby potatoes, halved
2 cups fresh green beans, trimmed and cut into halves
3 tablespoons olive oil
4 cloves garlic, minced
1/4 cup honey
1/4 cup soy sauce
1 tablespoon Dijon mustard
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon dried thyme
Salt, to taste
1 tablespoon butter
Optional: crushed red pepper flakes for a little heat
Preparation Steps
1. Begin by preparing the potatoes. Place the halved baby potatoes in a pot of salted water and bring to a boil. Cook for about 10–12 minutes until just tender, then drain and set aside.
2. Heat a large skillet over medium heat and add the olive oil. Add the sausage pieces and cook for 4–5 minutes, turning occasionally, until nicely browned on the outside. Remove the sausage from the pan and set aside.
3. In the same skillet, add the green beans and cook for about 3–4 minutes, stirring occasionally until they begin to soften but still remain vibrant and slightly crisp.
4. Add the minced garlic to the pan and sauté for about 30 seconds until fragrant.
5. In a small bowl, whisk together the honey, soy sauce, Dijon mustard, black pepper, paprika, and dried thyme to create the sauce.
6. Return the sausage to the skillet along with the cooked potatoes. Pour the honey garlic sauce over everything and gently toss to coat all ingredients evenly.
7. Add the butter and allow the mixture to simmer for 4–5 minutes, stirring occasionally. The sauce will slightly thicken and glaze the sausage, potatoes, and green beans beautifully.
