Vegetable Beef Soup

Ingredients
500 g beef stew meat, cut into bite-size cubes
1 tbsp olive oil
1 small onion, chopped
3 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
2 medium potatoes, peeled and diced
2 cups frozen mixed vegetables (peas, corn, green beans, carrots)
6 cups beef broth
1 can (400 g) diced tomatoes
1 tbsp tomato paste
1 tsp salt
1/2 tsp black pepper
1 tsp paprika
1/2 tsp dried thyme
1 bay leaf
2 tbsp fresh parsley, chopped
Instructions
Heat olive oil in a large pot over medium heat. Add the beef cubes and cook until browned on all sides.
Add chopped onion and cook for about 3 minutes until softened. Stir in minced garlic and cook for 30 seconds.
Add carrots, celery, and diced potatoes to the pot and stir to combine.
Pour in the beef broth and diced tomatoes, then add tomato paste, salt, pepper, paprika, thyme, and bay leaf. Stir well.
Bring the soup to a boil, then reduce heat to low and simmer for about 30 minutes until the beef becomes tender.
Add the frozen mixed vegetables and continue simmering for another 10–15 minutes until all vegetables are cooked.
Remove the bay leaf, stir in fresh parsley, and ladle the vegetable beef soup into bowls.
