Dill Pickle Ranch Smash Chicken Tacos – Crispy Cheese Lace & Juicy, Flavor-Packed Bites
Ingredients
1 pound ground chicken
1 teaspoon garlic powder
1 teaspoon paprika
Salt and black pepper, to taste
8 small tortillas
1 cup shredded mozzarella or Monterey Jack cheese
1/2 cup chopped dill pickles
2 tablespoons pickle brine
1 cup shredded cabbage
Instructions
1. Prepare the Chicken
In a medium bowl, combine the ground chicken, garlic powder, paprika, salt, and black pepper. Mix until all spices are evenly incorporated.
Preheat a large non-stick skillet over medium-high heat.
2. Make the Cheese Lace
On a separate skillet or the same skillet (wipe it clean if needed), sprinkle small circles of shredded cheese (about 2–3 tablespoons per circle) and cook until the cheese melts and turns golden brown on the bottom.
Carefully remove the crispy cheese rounds with a spatula and set aside on a paper towel. These will be your cheese “lacy shells” for the tacos.
3. Cook the Chicken
Add a little oil to the preheated skillet.
Place spoonfuls of the seasoned chicken into the skillet and gently smash them flat using a spatula (like mini patties).
Cook 3–4 minutes on each side until golden brown and fully cooked.
Drizzle the pickle brine over the chicken in the last minute of cooking to infuse tangy flavor.
4. Assemble the Tacos
Warm the tortillas on a skillet or microwave.
Place a layer of shredded cabbage on each tortilla.
Add the juicy smashed chicken on top.
Sprinkle chopped dill pickles over the chicken.
Top each taco with a crispy cheese lace round for that extra crunch and cheesy flavor.
5. Serve
Serve immediately while the chicken is hot and the cheese is crispy.
Optional: Add a drizzle of ranch dressing or a sprinkle of fresh herbs for extra flavor.
Tips:
Use a mix of mozzarella and cheddar for extra flavor in your cheese lace.
For extra tang, add a bit more pickle brine to the chicken while cooking.
Don’t overcrowd the skillet when making cheese lace rounds—they cook best in small batches.
