Dreamy Lemon Cream Layer Cake (Light, Zesty & Irresistible!)

This soft and fluffy lemon cake is bursting with fresh citrus flavor and layered with a smooth, creamy filling. Perfect for spring gatherings, birthdays, or whenever you crave something bright and delicious!

 

 

 

Ingredients

For the Cake:

2 1/2 cups all-purpose flour

2 1/2 teaspoons baking powder

1/2 teaspoon salt

1 cup unsalted butter, softened

1 3/4 cups granulated sugar

4 large eggs

1 tablespoon lemon zest

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

1 cup whole milk

For the Lemon Cream Filling:

1 cup heavy whipping cream

8 oz (225g) cream cheese, softened

1/2 cup powdered sugar

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

For the Frosting:

1/2 cup unsalted butter, softened

2 cups powdered sugar

2–3 tablespoons lemon juice

1 teaspoon vanilla extract

 

 

 

 

Instructions

1. Prepare the Cake:

Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.

In a bowl, whisk together flour, baking powder, and salt.

In a separate large bowl, beat the butter and sugar until light and fluffy.

Add eggs one at a time, mixing well after each addition.

Stir in lemon zest, lemon juice, and vanilla extract.

Gradually add the dry ingredients, alternating with milk, mixing until just combined.

Divide the batter evenly between the pans.

2. Bake:

Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

Let the cakes cool completely before assembling.

3. Make the Lemon Cream Filling:

Beat the cream cheese until smooth.

Add powdered sugar, lemon juice, and zest; mix until creamy.

In another bowl, whip the heavy cream until soft peaks form.

Gently fold the whipped cream into the cream cheese mixture.

4. Prepare the Frosting:

Beat butter until creamy, then gradually add powdered sugar.

Mix in lemon juice and vanilla until smooth and spreadable.

5. Assemble the Cake:

Place one cake layer on a serving plate.

Spread the lemon cream filling evenly on top.

Add the second cake layer.

Frost the top and sides of the cake.

 

 

 

Serving Tips

Garnish with lemon slices, zest curls, or fresh berries for a beautiful finish.

Chill for 30–60 minutes before serving for cleaner slices.
