Lemon & Blueberry Icebox Cake

 

 

 

Ingredients

For the crust:

2 ½ cups graham cracker crumbs

¾ cup unsalted butter, melted

For the filling:

2 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 (3.4 oz) box lemon instant pudding mix

1 ½ cups cold milk

1 teaspoon vanilla extract

1 tablespoon lemon zest (optional, for extra flavor)

For the layers:

 

 

 

 

2–3 cups fresh blueberries (or blueberry pie filling)

2 cups whipped topping (like Cool Whip) or homemade whipped cream

Instructions

1. Prepare the crust

In a bowl, mix graham cracker crumbs with melted butter until fully combined.

Press the mixture firmly into the bottom of a 9×13-inch dish.

Chill in the refrigerator for 15–20 minutes to set.

2. Make the creamy lemon filling

In a large bowl, beat the cream cheese and sugar until smooth and creamy.

In a separate bowl, whisk together the lemon pudding mix and cold milk until it thickens (about 2 minutes).

Add the pudding mixture to the cream cheese mixture and beat until fully combined.

Stir in vanilla extract and lemon zest (if using).

3. Fold in whipped topping

Gently fold in the whipped topping until light and fluffy.

This creates a smooth, airy texture.

4. Assemble the cake

Spread half of the lemon cream mixture over the chilled crust.

Add a layer of blueberries evenly on top.

Spread the remaining lemon mixture over the blueberries.

Add another layer of blueberries on top for decoration.

5. Chill (very important!)

Cover and refrigerate for at least 4–6 hours, preferably overnight.

This allows the layers to set and flavors to blend beautifully.

Extra whipped cream

Crushed graham crackers

Fresh mint leaves

Tips for Best Results

Use fresh blueberries for a lighter taste, or blueberry pie filling for a sweeter, richer version.

Let it chill overnight for the best texture—it becomes perfectly sliceable.

You can substitute graham crackers with digestive biscuits if needed.
