Golden Cheesy Beef & Veggie Comfort Bake
A simple, cozy dish packed with flavor and perfect for busy family dinners
There’s nothing better than a warm, oven-baked meal that comes together with just a handful of ingredients. This cheesy beef and veggie bake is rich, hearty, and incredibly satisfying—layered with savory ground beef, tender vegetables, and a blanket of melted cheese. It’s the kind of comforting dish you’ll want to make again and again.
Ingredients (5 Simple Staples):
1 lb (450g) ground beef
2 cups mixed vegetables (fresh or frozen – carrots, peas, corn, or broccoli work great)
2 cups shredded cheese (cheddar or a blend)
1 can (10.5 oz) cream of mushroom or cream of chicken soup
2 cups cooked pasta or diced potatoes
Instructions:
Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
Cook the beef:
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and season with salt and pepper if desired.
Mix the filling:
In a large bowl, combine the cooked beef, mixed vegetables, soup, and cooked pasta (or potatoes). Stir until everything is well coated and evenly mixed.
Assemble the bake:
Transfer the mixture into the prepared baking dish. Spread it out evenly, then top generously with shredded cheese.
Bake to perfection:
Place in the oven and bake for 25–30 minutes, or until the cheese is melted, bubbly, and slightly golden on top.
Serve & enjoy:
Let it cool for a few minutes before serving. Enjoy warm with a simple side salad or crusty bread.
Tips & Variations:
Add garlic, onions, or spices for extra flavor.
Swap ground beef for ground chicken or turkey for a lighter version.
Sprinkle breadcrumbs on top before baking for a crispy finish.
This dish is all about comfort, simplicity, and that irresistible cheesy goodness—perfect for weeknights when you want something easy but satisfying.
