Ultimate Keto Reuben Casserole (Low-Carb Comfort Bake)

A rich, cheesy, and tangy low-carb twist on the classic Reuben sandwich—perfect for keto lovers who still want big flavor without the bread.

 

 

 

Ingredients:

1 lb corned beef, chopped

2 cups sauerkraut, well drained

1 1/2 cups shredded Swiss cheese

1 cup shredded cheddar cheese

1/2 cup sugar-free Thousand Island dressing (optional but highly recommended)

2 tbsp butter (for greasing or extra richness)

1 tsp garlic powder

1/2 tsp black pepper

1 tbsp chopped parsley (optional, for garnish)

 

 

 

Instructions:

Preheat your oven to 375°F (190°C) and lightly grease a baking dish with butter.

Spread the chopped corned beef evenly across the bottom of the dish.

Layer the well-drained sauerkraut over the corned beef.

Sprinkle garlic powder and black pepper evenly over the layers.

Drizzle the Thousand Island dressing on top if using.

Add a generous layer of shredded Swiss cheese, followed by cheddar cheese.

Bake for 20–25 minutes, or until the cheese is fully melted and bubbly with golden edges.

Let it rest for 5 minutes before serving. Garnish with fresh parsley if desired.

Serving Tip:

Serve hot as a standalone keto meal or pair it with a simple green salad for extra crunch and freshness.
