Creamy Shrimp & Avocado Bliss Salad (Fresh, Light & Irresistible)

A refreshing and satisfying salad that combines juicy shrimp, buttery avocado, and a creamy, zesty dressing. Perfect for a light lunch, healthy dinner, or an elegant starter.

 

 

 

Ingredients:

1 lb (450g) shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/4 cup fresh cilantro or parsley, chopped

1 tablespoon olive oil

Salt and black pepper, to taste

For the Creamy Dressing:

1/2 cup mayonnaise (or Greek yogurt for a lighter option)

1 tablespoon fresh lime or lemon juice

1 teaspoon Dijon mustard

1 garlic clove, minced

Salt and pepper, to taste

 

 

 

Instructions:

Cook the Shrimp:

Heat olive oil in a skillet over medium heat. Season shrimp with salt and pepper, then cook for 2–3 minutes per side until pink and opaque. Remove from heat and let cool.

Prepare the Salad Base:

In a large bowl, combine diced avocado, cherry tomatoes, red onion, and fresh herbs.

Make the Dressing:

In a small bowl, whisk together mayonnaise (or yogurt), lime/lemon juice, Dijon mustard, garlic, salt, and pepper until smooth and creamy.

Assemble the Salad:

Add the cooled shrimp to the bowl with the vegetables. Pour the dressing over and gently toss to combine, being careful not to mash the avocado.

 

 

 

Serve:

Serve immediately for the freshest flavor, or chill for 15–20 minutes before serving for a cooler, more refreshing dish.

Serving Tips:

Enjoy on its own, in lettuce wraps, or over a bed of greens.

Add cucumber or corn for extra texture and sweetness.

Serve with crusty bread or crackers for a complete meal.
