Slow-Braised Beef with Caramelized Onion Gravy

 

 

Rich, hearty, and irresistibly comforting, this slow-braised beef is the kind of meal that turns an ordinary evening into something special. Tender beef is simmered low and slow until it practically falls apart, then bathed in a silky, deeply flavored onion gravy. Served over buttery mashed potatoes, fluffy rice, or both, it’s a timeless dish perfect for Sunday dinners, family gatherings, or whenever you crave pure comfort on a plate.

Ingredients

For the Braised Beef

3 pounds beef chuck roast or brisket

2 tablespoons olive oil

2 tablespoons unsalted butter

2 large yellow onions, thinly sliced

4 garlic cloves, minced

2 tablespoons tomato paste

2 cups beef broth

1 cup dry red wine (or additional beef broth)

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon smoked paprika

2 bay leaves

1½ teaspoons kosher salt, or to taste

1 teaspoon freshly ground black pepper

2 tablespoons fresh parsley, chopped

Fresh rosemary sprigs, for garnish

Creamy mashed potatoes

Steamed white rice or buttered egg noodles

Instructions

Season the Beef Pat the beef dry with paper towels. Season generously on all sides with salt, black pepper, smoked paprika, and dried thyme.

Sear Until Golden Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the beef for 4 to 5 minutes per side, until a deep golden-brown crust forms. Transfer to a plate.

Caramelize the Onions Reduce the heat to medium. Add the butter, then stir in the sliced onions. Cook for 12 to 15 minutes, stirring occasionally, until soft, golden, and lightly caramelized.

Build the Flavor Base Add the minced garlic and tomato paste. Cook for 1 to 2 minutes, stirring constantly, until fragrant and the tomato paste darkens slightly.

Deglaze the Pot Pour in the red wine, scraping up all the flavorful browned bits from the bottom of the pot. Let it simmer for 3 to 4 minutes until slightly reduced.

Braise the Beef Stir in the beef broth, Worcestershire sauce, and bay leaves. Return the beef to the pot, nestling it into the liquid. Spoon some of the onion mixture over the top.

Cook Low and Slow Cover and simmer over very low heat for 3 to 3½ hours, or until the beef is exceptionally tender and easily pulls apart with a fork. Alternatively, bake in a 325°F (165°C) oven for the same amount of time.

Finish the Gravy Transfer the beef to a cutting board and let it rest for 10 minutes. Meanwhile, simmer the gravy uncovered for 5 to 10 minutes until thickened and glossy. Remove the bay leaves.

Slice and Serve Slice the beef against the grain or gently shred it into large pieces. Arrange over mashed potatoes, rice, or noodles, then ladle the rich onion gravy generously over the top.

Garnish and Enjoy Sprinkle with fresh parsley and garnish with rosemary sprigs for a beautiful finishing touch.
