Ingredients

1½ pounds beef stew meat

1 cup pearl barley, rinsed

3 cups carrots, sliced

6 cups beef broth

Instructions

Place the beef stew meat in the bottom of your slow cooker.

Add the rinsed pearl barley and sliced carrots.

Pour the beef broth over the top, making sure all ingredients are fully covered.

Cover and cook on low for 7 to 8 hours, or on high for 4 to 5 hours, until the beef is tender and the barley is soft.

Stir well before serving. Taste and season with salt and black pepper, if desired.

2 cloves garlic, minced

1 teaspoon dried thyme or rosemary
