Ingredients

4 cups prepared mashed potatoes (warm and smooth)

2 large egg yolks

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

In a large bowl, combine the warm mashed potatoes, melted butter, and egg yolks. Mix until smooth, creamy, and fully incorporated.

Transfer the potato mixture to a piping bag fitted with a large star tip. If you don’t have a piping bag, a large zip-top bag with the corner snipped off works well.

Pipe the potatoes into decorative swirls or mounds onto the prepared baking sheet, spacing them about 1 inch apart.

Bake for 18 to 22 minutes, or until the edges are golden brown and lightly crisp.
