Golden Creamy Chicken & Sweet Corn Bake

 

This cozy, oven-baked casserole is the definition of comfort food. Tender shredded chicken meets sweet corn in a rich, creamy sauce, all topped with a buttery, crunchy layer. It’s simple, satisfying, and guaranteed to have everyone coming back for seconds.

 

 

 

Ingredients

2 cups cooked chicken, shredded

1 can (15 oz) sweet corn, drained

1 cup frozen corn (optional, for extra texture)

1 can (10.5 oz) cream of chicken soup

1/2 cup sour cream

1/2 cup milk

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and black pepper, to taste

1/2 cup crushed crackers or crispy fried onions

2 tablespoons butter, melted

Fresh parsley, chopped (for garnish)

 

 

 

 

Instructions

Preheat your oven to 180°C (350°F) and lightly grease a baking dish.

In a large mixing bowl, combine the shredded chicken, drained corn, and frozen corn (if using).

Add the cream of chicken soup, sour cream, and milk. Stir well until the mixture becomes smooth and creamy.

Fold in the cheddar and mozzarella cheeses. Season with garlic powder, onion powder, paprika, salt, and pepper. Mix until evenly combined.

Transfer the mixture into the prepared baking dish and spread it out evenly.

In a small bowl, mix the crushed crackers (or fried onions) with melted butter. Sprinkle this mixture evenly over the top.

Bake for 30–35 minutes, or until the casserole is hot, bubbly, and golden on top.

Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
