Golden Baked Chicken Veggie Patties with Creamy Garlic Mash & Rich Tomato Sauce

These juicy baked chicken patties are packed with colorful vegetables, fresh herbs, and savory flavor, then served over buttery mashed potatoes with a delicious homemade tomato sauce. A comforting family dinner that’s hearty, healthy, and incredibly satisfying!

 

 

 

Ingredients

For the Chicken & Vegetable Patties

1 onion, roughly chopped

A handful of fresh parsley

1 green bell pepper, chopped

1 red bell pepper, chopped

2 garlic cloves

3 chicken fillets (about 600–700 g / 1.3–1.5 lb), cut into chunks

1 egg

1/2 cup breadcrumbs

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and black pepper, to taste

2 tablespoons olive oil

For the Creamy Potato Mash

5 medium potatoes, peeled and cubed

2 tablespoons butter

1/3 cup warm milk or cream

Salt and pepper, to taste

A pinch of garlic powder (optional)

For the Tomato Sauce

2 tablespoons olive oil

2 garlic cloves, minced

1 small onion, finely chopped

2 cups tomato sauce or crushed tomatoes

1 teaspoon sugar

1 teaspoon oregano

Salt and pepper, to taste

 

 

 

 

Instructions

Step 1: Prepare the Chicken Mixture

Add the onion, parsley, green bell pepper, red bell pepper, and garlic to a food processor. Pulse until finely chopped.

Add the chicken chunks and blend until the mixture is combined but still slightly textured.

Transfer the mixture to a bowl and stir in the egg, breadcrumbs, paprika, Italian seasoning, salt, and pepper.

Step 2: Shape & Bake

Preheat your oven to 200°C (400°F).

Line a baking tray with parchment paper and lightly grease it with olive oil.

Shape the chicken mixture into medium-sized patties and place them on the tray.

Brush or drizzle with olive oil and bake for 25–30 minutes, flipping halfway through, until golden brown and fully cooked.

Step 3: Make the Creamy Potato Mash

Boil the potatoes in salted water until fork-tender, about 15–20 minutes.

Drain well and mash with butter and warm milk until smooth and creamy.

Season with salt, pepper, and garlic powder if desired.

Step 4: Prepare the Tomato Sauce

Heat olive oil in a saucepan over medium heat.

Sauté the onion until soft, then add garlic and cook for 1 minute.

Pour in the tomato sauce, then season with sugar, oregano, salt, and pepper.

Simmer for 10–15 minutes until rich and flavorful.

To Serve

Spread a generous layer of creamy mashed potatoes on each plate, top with the baked chicken patties, and spoon over the warm tomato sauce.

Garnish with fresh parsley and enjoy this cozy, flavor-packed dinner!
