Golden Crust Chicken Pie with Creamy Savory Filling
A flaky, buttery chicken pie packed with tender chicken, vegetables, and a rich creamy sauce — perfect for lunch, dinner, or special gatherings.
Ingredients
For the Dough
500 g (4 cups) all-purpose flour
250 g (1 cup) butter or margarine, chilled
1/2 teaspoon salt
1/2 cup cold milk or water
For the Chicken Filling
300 g minced chicken
or 500 g chicken pieces with bones
3 medium carrots, diced
2 Irish potatoes, diced
1 medium onion, chopped
1 cup chicken stock
2 heaped tablespoons cornflour or all-purpose flour
1 teaspoon thyme
1 tablespoon garlic powder
1 tablespoon chicken seasoning
Salt to taste
Optional: black pepper and chopped parsley for extra flavor
For Brushing
1 egg, beaten
Instructions
Step 1: Prepare the Dough
In a large bowl, combine the flour and salt.
Add the butter or margarine and rub it into the flour until the mixture resembles breadcrumbs.
Gradually add the cold milk or water and mix until a soft dough forms.
Wrap the dough in plastic wrap and refrigerate for 20–30 minutes.
Step 2: Make the Chicken Filling
If using chicken with bones, boil until fully cooked, then shred the meat and set aside. Reserve the stock.
In a pan over medium heat, sauté the onions until soft and fragrant.
Add the carrots and potatoes, then cook for 5 minutes.
Stir in the chicken, thyme, garlic powder, chicken seasoning, salt, and black pepper.
Mix the cornflour with a little cold water to create a smooth slurry.
Pour in the chicken stock and stir in the slurry. Cook until the filling becomes thick and creamy.
Remove from heat and allow the filling to cool completely.
Step 3: Assemble the Pie
Preheat the oven to 180°C (350°F).
Roll out the dough on a lightly floured surface.
Cut circles or rectangles depending on your preferred pie shape.
Place a spoonful of filling in the center of each piece.
Fold over the dough and seal the edges with a fork.
Step 4: Bake
Arrange the pies on a greased baking tray.
Brush the tops with beaten egg for a beautiful golden finish.
Bake for 25–35 minutes or until golden brown and crisp.
