Christmas Peppermint Ice Cream Cake
Celebrate the season with this creamy and refreshing Christmas Peppermint Ice Cream Cake!
Layers of cool peppermint and rich vanilla (or chocolate) ice cream sit on a crunchy chocolate cookie crust, topped with fluffy whipped cream and festive peppermint sprinkles. It’s the perfect holiday dessert to impress your guests!
Ingredients
For the Crust
- 24 chocolate sandwich cookies (like Oreos)
- 4 tbsp unsalted butter, melted
For the Ice Cream Layers
- 1½ quarts (6 cups) peppermint ice cream, slightly softened
- 1½ quarts (6 cups) vanilla or chocolate ice cream
Optional Add-Ins
- 1 cup crushed peppermint candies or candy canes
- ½ cup mini chocolate chips or chocolate shavings
For the Whipped Topping
- 1½ cups heavy whipping cream
- 2 tbsp powdered sugar
- ½ tsp vanilla extract
- Crushed peppermint or chocolate curls for garnish
Instructions
Prepare the Crust
- Crush the cookies into fine crumbs using a food processor or rolling pin.
- Mix the crumbs with melted butter until evenly coated.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Freeze for 15–20 minutes to set.
Add the Peppermint Layer
- Spread the softened peppermint ice cream evenly over the chilled crust.
- If desired, sprinkle crushed peppermint candies or mini chocolate chips on top.
- Freeze for 30–45 minutes until firm.
3️⃣Add the Vanilla (or Chocolate) Layer
- Spread the softened vanilla or chocolate ice cream evenly over the peppermint layer.
- Smooth the surface and cover.
- Freeze for at least 4 hours or overnight until completely firm.
Make the Whipped Topping
- Beat the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Spread or pipe the whipped cream over the top of the frozen cake.
Garnish & Serve
- Decorate with crushed peppermint candies, chocolate curls, or festive sprinkles.
- Let the cake sit at room temperature for 10–15 minutes before slicing.
- Use a warm knife for clean, smooth slices.
