
Cheesy Baked Zucchini Delight

Ingredients
2 medium zucchinis
1 teaspoon salt (for the zucchini)
2 small onions, finely chopped
Olive oil, for frying and greasing
1 carrot, grated
1 green bell pepper, diced
1 red bell pepper, diced
2 fl oz (60 ml) cooking cream
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon oregano
3 eggs
8 oz (240 g) sour cream
3 tablespoons flour
Small bunch fresh parsley, finely chopped
3 garlic cloves, grated
10 cherry tomatoes, halved
8 oz (240 g) soft cheese, grated
Instructions
Preheat your oven to 375°F (190°C). Grease a baking dish lightly with olive oil.
Slice the zucchinis into thin rounds and sprinkle with 1 teaspoon of salt. Let them rest for 10 minutes to release excess moisture, then pat dry with paper towels.
In a large skillet, heat a little olive oil over medium heat. Sauté the onions until soft and fragrant.
Add the grated carrot, green bell pepper, and red bell pepper. Cook for 5–7 minutes until the vegetables are tender.
Stir in the cooking cream, salt, black pepper, and oregano. Mix well and remove from heat.
In a large bowl, whisk together the eggs, sour cream, and flour until smooth.
Add the chopped parsley and grated garlic to the mixture, then fold in the cooked vegetables.
Arrange half of the zucchini slices in the prepared baking dish. Spread half of the creamy vegetable mixture on top.
Repeat the layers with the remaining zucchini and filling.
Top with halved cherry tomatoes and generously sprinkle the grated cheese over everything.
Bake for 35–40 minutes, or until golden, bubbly, and beautifully melted on top.
Let it rest for 10 minutes before serving for the perfect texture.
