Cheesy Dorito Taco Casserole” 🧀🌮
Ingredients:
1 lb lean ground beef
½ yellow onion, diced
1 tsp minced garlic
1 pack taco seasoning (about 1 oz)
12 oz bag frozen corn
1 (14.5 oz) can diced tomatoes with green chilies, drained
1 cup sour cream
3 cups crushed Doritos (any flavor you like, Nacho Cheese works great)
3 cups shredded Mexican blend cheese
Optional garnish: sliced green onions, chopped cilantro, sliced jalapeños, or extra Doritos
Instructions:
Preheat oven:
Preheat your oven to 350°F (175°C).
Cook the beef:
In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
Add aromatics:
Add diced onion and minced garlic to the skillet. Sauté for 3–4 minutes until onions are softened.
Season:
Stir in the taco seasoning and a splash of water (about ¼ cup). Cook for 2–3 minutes until well combined.
Add veggies:
Mix in the frozen corn and diced tomatoes with green chilies. Cook for another 3–4 minutes until heated through. Remove from heat.
Layer the casserole:
In a greased 9×13-inch baking dish, spread half of the crushed Doritos on the bottom.
Top with half of the beef mixture, then half of the sour cream.
Sprinkle 1½ cups of the cheese on top.
Repeat layers: remaining Doritos, beef mixture, sour cream, and cheese.
Bake:
Bake uncovered in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly.
Garnish and serve:
Let the casserole sit for 5 minutes before serving. Garnish with sliced green onions, cilantro, jalapeños, or extra Doritos if desired.
