Cheesy Spinach & Garlic Meatballs with a Melty Mozzarella Center
Ingredients:
1 lb (450g) ground beef
1 cup fresh spinach, finely chopped
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup finely chopped onion
2 cloves garlic, minced
1 large egg
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
4 oz (115g) mozzarella cheese, cut into small cubes
2 tablespoons olive oil
2 cups marinara sauce (optional, for serving)
Instructions:
Prepare the mixture:
In a large bowl, combine the ground beef, chopped spinach, breadcrumbs, Parmesan cheese, onion, garlic, egg, salt, pepper, and Italian seasoning. Mix gently until just combined.
Shape the meatballs:
Take a small portion of the mixture and flatten it slightly in your hand. Place a cube of mozzarella in the center, then wrap the meat around it and roll into a ball. Repeat with the remaining mixture.
Cook the meatballs:
Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for 8–10 minutes, turning occasionally, until browned on all sides and cooked through.
Add sauce (optional):
Pour in the marinara sauce and let the meatballs simmer for another 5–7 minutes to soak up the flavors.
Serve:
Serve hot with pasta, crusty bread, or on their own. Garnish with extra Parmesan and fresh herbs if desired.
Tips:
For extra tenderness, avoid overmixing the meat.
You can bake the meatballs at 400°F (200°C) for 15–18 minutes instead of frying.
Try adding a pinch of chili flakes for a little heat.
