It’s simple enough for a weeknight dinner, yet impressive enough for a special occasion.
Ingredients
500 g sirloin steak or beef steak, cut into bite-sized cubes
4 medium potatoes, peeled or well scrubbed, cut into small cubes
3 tablespoons olive oil
2 tablespoons unsalted butter
4 garlic cloves, minced
1 teaspoon salt, or to taste
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
1/2 teaspoon chili flakes (optional)
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 tablespoon Worcestershire sauce (optional)
1 tablespoon fresh parsley, finely chopped
Instructions
Parboil the Potatoes Bring a large pot of salted water to a boil. Add the cubed potatoes and cook for 5 to 6 minutes, just until slightly tender. Drain thoroughly and let them sit for a few minutes to allow excess moisture to evaporate. This helps them crisp up beautifully when pan-fried.
Season the Steak Pat the steak cubes dry with paper towels. This ensures a better sear. Season with salt, black pepper, paprika, onion powder, and garlic powder. If using Worcestershire sauce, drizzle it over the steak and toss gently to coat.
Cook the Potatoes Heat a large cast-iron skillet or heavy pan over medium-high heat. Add 2 tablespoons of olive oil. Spread the potatoes in a single layer and cook undisturbed for 3 to 4 minutes. Turn occasionally and continue cooking for 12 to 15 minutes, until golden brown and crispy on all sides.
Add Garlic and Herbs to the Potatoes Reduce the heat slightly. Add 1 tablespoon of butter, half of the minced garlic, and half of the thyme to the potatoes. Stir for 1 to 2 minutes until fragrant. Transfer the potatoes to a plate and keep warm.
Sear the Steak Bites In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to high. Add the steak cubes in a single layer, working in batches if needed to avoid overcrowding. Sear for 2 to 3 minutes per side until deeply browned and cooked to your preferred doneness.
Finish with Garlic Butter Lower the heat to medium. Add the remaining butter, minced garlic, thyme, and chili flakes (if using). Stir gently, allowing the butter to melt and coat the steak in a rich, fragrant sauce. Cook for another minute until the garlic is aromatic.
Combine and Serve Return the crispy potatoes to the skillet and toss everything together until evenly coated in the garlic butter. Sprinkle with fresh parsley and serve immediately.
Serving Suggestions
Serve hot straight from the skillet with:
A crisp green salad
Steamed vegetables
Crusty bread to soak up the garlic butter
A dollop of sour cream or garlic aioli on the side
Helpful Tips
For the best sear, make sure the steak is dry before cooking.
Avoid overcrowding the skillet, as this can cause the steak to steam instead of sear.
Yukon Gold or red potatoes work especially well for this recipe.
Fresh thyme adds a wonderful aroma, but dried thyme works perfectly too.
Golden, crispy potatoes and juicy steak bites coated in buttery garlic goodness—this is comfort food at its finest. Perfect for busy weeknights, cozy weekends, or whenever you want a meal that feels both rustic and indulgent.
