Creamy Cheddar Chicken Fajita Pasta

 

 

A delightful fusion of flavors, this creamy pasta dish combines tender chicken, vibrant bell peppers, and a rich cheddar sauce, making it a perfect weeknight dinner.

 

 

 

Ingredients:

3 cups rotini pasta

2 teaspoons olive oil

2 bell peppers, sliced (any color)

½ cup yellow onion, diced

2 boneless chicken breasts, diced

1 cup heavy whipping cream

2 cups cheddar cheese, shredded

1 packet fajita seasoning

 

 

 

Directions:

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

 

 

 

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced bell peppers and diced onion. Sauté for about 5 minutes, or until the vegetables are tender.

 

 

 

Cook the Chicken: Add the diced chicken breasts to the skillet with the vegetables. Sprinkle the fajita seasoning over the chicken and cook until the chicken is no longer pink and cooked through, about 7-10 minutes.

 

 

 

Make the Creamy Sauce: Reduce the heat to low and pour in the heavy whipping cream. Stir to combine, then gradually add the shredded cheddar cheese, stirring until melted and creamy.

 

 

 

Combine: Add the cooked rotini pasta to the skillet, tossing to coat the pasta evenly with the creamy chicken and vegetable mixture. Cook for an additional 2-3 minutes to heat through.
