Ingredients
For the Crispy Buffalo Chicken
- 1 lb boneless, skinless chicken breasts, cut into strips
- 1 cup buffalo sauce (plus extra for drizzling)
- 1 cup breadcrumbs (panko for extra crunch)
- ½ cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- Salt and black pepper, to taste
- Oil for frying or cooking spray for baking/air frying
For the Wraps
- 1 cup shredded cheddar cheese (or cheddar-jack blend)
- 6 slices bacon, cooked until crispy and crumbled
- 4 large flour tortillas
- ½ cup ranch dressing
- 1 cup shredded lettuce
- 1 small tomato, diced (optional)
- ¼ cup sliced green onions (optional)
Instructions
1. Prepare the Chicken
- Pat the chicken strips dry and season lightly with salt and pepper.
- Set up a breading station:
- Bowl 1: flour mixed with garlic powder, onion powder, and paprika
- Bowl 2: eggs, beaten
- Bowl 3: breadcrumbs
- Dredge each chicken strip in flour, dip into egg, then coat well with breadcrumbs.
2. Cook the Chicken
Frying Method (crispiest):
- Heat oil in a deep skillet over medium heat.
- Fry chicken in batches for 4–5 minutes per side until golden brown and cooked through.
- Drain on paper towels.
Baking Method:
- Preheat oven to 425°F (220°C).
- Place breaded chicken on a lined baking sheet, spray lightly with oil.
- Bake for 18–22 minutes, flipping halfway.
Air Fryer Method:
- Air fry at 400°F (200°C) for 12–15 minutes, shaking halfway.
3. Toss in Buffalo Sauce
- Place hot, cooked chicken in a large bowl.
- Pour 1 cup buffalo sauce over the chicken and toss until evenly coated.
4. Assemble the Wraps
- Warm tortillas slightly to make them flexible.
- Spread ranch dressing down the center of each tortilla.
- Add lettuce, buffalo chicken, shredded cheddar cheese, and crispy bacon.
- Top with tomatoes and green onions if using.
5. Wrap & Toast (Optional but Recommended)
- Fold in the sides and roll tightly.
- Toast wraps seam-side down in a skillet over medium heat for 2–3 minutes per side until golden and melty.
