Creamy Chicken & Sweet Corn Rice Bake
A cozy, oven-baked dinner loaded with tender chicken, creamy rice, sweet corn, and melted cheese. Perfect for busy weeknights or comforting family meals.
Ingredients
6 boneless chicken tenderloins or small chicken breasts
2 cups sweet corn kernels
1 cup uncooked long-grain rice
2 cups chicken broth
1 cup heavy cream
1 small onion, finely diced
3 cloves garlic, minced
1 cup shredded cheddar or mozzarella cheese
2 tbsp butter
1 tsp paprika
1 tsp Italian seasoning
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a large baking dish.
Prepare the Base
In the baking dish, combine the uncooked rice, corn kernels, onion, and garlic. Pour in the chicken broth and heavy cream, then stir well.
Season the Chicken
Season the chicken with paprika, Italian seasoning, salt, and black pepper. Arrange the chicken over the rice mixture.
Add Butter & Bake
Dot the top with small pieces of butter. Cover tightly with foil and bake for 40–45 minutes, or until the rice is tender and the chicken is fully cooked.
Add Cheese
Remove the foil, sprinkle the shredded cheese evenly over the top, and return to the oven uncovered for 10 minutes, until the cheese is melted and bubbly.
Serve & Enjoy
