Crispy Baked Zucchini Bites
Light, cheesy, and packed with flavor — these golden zucchini balls are the perfect healthy snack, appetizer, or easy dinner side. Crispy on the outside, soft on the inside, and baked instead of fried for a guilt-free treat everyone will love!
Ingredients
2 medium zucchini, grated
1 teaspoon salt
1 egg
1 cup breadcrumbs
½ cup grated Parmesan cheese
1 garlic clove, minced
2 tablespoons chopped parsley
½ teaspoon black pepper
½ teaspoon paprika
1 tablespoon olive oil
Instructions
Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
Grate the zucchini and sprinkle with salt. Let sit for 10 minutes, then squeeze out as much liquid as possible using a clean towel.
In a large bowl, combine the zucchini, egg, breadcrumbs, Parmesan, garlic, parsley, pepper, and paprika. Mix until well combined.
Shape the mixture into small balls and place them on the prepared baking tray.
Lightly brush or drizzle with olive oil for extra crispiness.
Bake for 20–25 minutes, turning halfway through, until golden and crispy.
