Crispy Mashed Potato Fries
Ingredients:
3 cups chilled or freshly prepared mashed potatoes
1/4 cup all-purpose flour
1 large egg
1/2 cup grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper, to taste
1/4 cup fresh parsley, chopped (optional, for garnish)
1/2 cup breadcrumbs (panko recommended for extra crunch)
2 tbsp olive oil (for drizzling or spraying)
Instructions:
1️⃣ Prepare the potato mixture
If using leftovers, ensure the mashed potatoes are well-chilled. For freshly made mash, let it cool, then refrigerate until firm.
In a large mixing bowl, combine mashed potatoes with egg, flour, Parmesan, garlic powder, onion powder, salt, and pepper. Mix thoroughly until smooth and uniform.
2️⃣ Shape into fries
Line a baking tray with parchment paper or a silicone mat, then lightly grease with olive oil or spray.
Shape the mixture into fry-like sticks (around 3–4 inches long and 1 inch wide). This should yield about 12–15 fries, depending on size.
3️⃣ Coat with breadcrumbs
Place breadcrumbs in a shallow dish. Roll each fry gently in the crumbs, pressing slightly so they adhere well. Panko breadcrumbs will give the crispiest texture.
4️⃣ Bake to perfection
Preheat oven to 425°F (220°C). Arrange the fries on the prepared tray, leaving space between each.
Drizzle or spray lightly with olive oil.
Bake for 20–25 minutes, flipping halfway through, until golden and crispy on the outside.
5️⃣ Serve and enjoy
Remove from oven and garnish with chopped parsley if desired.
Pair with your favorite dip — ketchup, ranch, or garlic aioli make great choices!
