It’s the kind of easy comfort food that proves a handful of pantry staples can create something truly satisfying.

Ingredients

2 pounds baby potatoes or Yukon Gold potatoes, cut into wedges

1/3 cup mayonnaise

2 to 3 tablespoons sriracha sauce (adjust to taste)

Optional Garnishes

Chopped fresh parsley

Sliced green onions

Extra sriracha for drizzling

Flaky sea salt

Instructions

Preheat the Oven

Preheat your oven to 425°F (220°C).

Line a large baking sheet with parchment paper or lightly grease it.

Prepare the Coating

In a large mixing bowl, whisk together the mayonnaise and sriracha until smooth and evenly combined.

Coat the Potatoes

Add the potato wedges to the bowl.

Toss thoroughly until every piece is generously coated in the spicy mayo mixture.

Arrange for Roasting

Spread the potatoes out in a single layer on the prepared baking sheet, making sure they are not overcrowded. This helps them crisp up beautifully.

Roast to Perfection

Roast for 35 to 40 minutes, turning once halfway through, until the potatoes are deeply golden, crispy on the edges, and fork-tender.

Serve

Transfer to a serving bowl and garnish with parsley, green onions, or an extra drizzle of sriracha if desired.

Serve immediately while hot and crispy.

Serving Suggestions

Top with a fried or poached egg for an easy meal.

Pair with grilled chicken, steak, or burgers.

Serve alongside a fresh green salad for a light and balanced dinner.

Tips for Success

Cut the potatoes into evenly sized wedges for consistent cooking.

For extra crispiness, avoid overcrowding the pan.

Adjust the amount of sriracha depending on how spicy you like it.

These crispy, creamy, spicy roasted potatoes are proof that sometimes the simplest recipes are the ones you’ll return to again and again.
