Easy Hobo Casserole
Ingredients:
- 1 lb (450 g) ground beef or turkey
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 3 medium potatoes, thinly sliced
- 2 cups carrots, thinly sliced
- 1 can (15 oz) green beans, drained
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup milk
- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper, to taste
- 1 cup shredded cheddar cheese (or your favorite cheese blend)
Instructions:
1. Preheat the oven:
Set your oven to 375°F (190°C) and lightly grease a 9×13-inch (23×33 cm) baking dish.
2. Cook the meat:
In a large skillet over medium heat, cook the ground beef (or turkey) with onion and garlic until browned. Drain any excess fat.
3. Combine ingredients:
In a large bowl, mix the cooked meat with sliced potatoes, carrots, green beans, cream of mushroom soup, and milk. Season with Italian herbs, salt, and pepper, stirring until evenly blended.
4. Assemble the casserole:
Spread the mixture evenly into the prepared baking dish and cover tightly with foil.
5. Bake:
Bake for 45 minutes covered. Remove the foil, sprinkle the shredded cheese on top, and bake for another 15 minutes, until the cheese is melted and the vegetables are tender.
6. Rest and serve:
Let the casserole sit for 5 minutes before serving to allow it to set.
