Caramelized Butternut Squash with Feta, Walnuts & Cranberry-Honey Drizzle
Ingredients:
- 3 cups butternut squash, peeled and cubed
- 2 tbsp olive oil
- 1 tbsp honey
- Salt and pepper, to taste
- ½ tsp cinnamon (optional, for extra warmth)
- ¼ cup crumbled feta cheese
- ¼ cup toasted walnuts, roughly chopped
- ¼ cup dried cranberries
- 2 tbsp honey
- 1 tbsp balsamic vinegar
- 1 tbsp cranberry or orange juice
- Fresh thyme or parsley, for garnish
Instructions:
1. Preheat the oven:
Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Prepare the squash:
In a large bowl, mix the squash cubes with olive oil, honey, salt, pepper, and cinnamon until well coated.
3. Roast:
Spread the squash evenly on the baking sheet and roast for 25–30 minutes, stirring halfway, until the pieces are golden and caramelized.
4. Make the glaze:
In a small saucepan, combine honey, balsamic vinegar, and cranberry (or orange) juice. Simmer over medium heat for 3–4 minutes until slightly thickened.
5. Assemble the dish:
Place the roasted squash on a serving plate. Sprinkle with crumbled feta, chopped walnuts, and dried cranberries.
6. Finish & serve:
Drizzle the warm cranberry-honey glaze over the top, garnish with fresh thyme or parsley, and serve warm or at room temperature.
