Ingredients
2½ lbs (1.1 kg) Yukon Gold or Russet potatoes, thinly sliced
4 tbsp unsalted butter, melted
3 cloves garlic, minced
1½ cups grated Parmesan cheese
1 tsp Italian seasoning
1 tsp fresh thyme leaves (optional)
Salt and black pepper, to taste
2 tbsp chopped fresh parsley, for garnish
Instructions
Preheat your oven to 400°F (200°C). Grease a 9-inch round baking dish or cast-iron skillet.
In a large bowl, combine the melted butter, garlic, Italian seasoning, thyme, salt, and black pepper.
Add the sliced potatoes and toss gently until every slice is evenly coated.
Arrange the potatoes upright or in overlapping layers in the baking dish, sprinkling Parmesan cheese between the layers and over the top.
Cover loosely with foil and bake for 40 minutes.
Remove the foil and continue baking for 25–35 minutes, or until the potatoes are fork-tender and the top is deep golden brown and crispy.
Let the potato cake rest for 10 minutes before serving to help it hold its shape.
Garnish with fresh parsley and an extra sprinkle of Parmesan before serving.
