1 fully cooked spiral-cut ham (8–10 lbs / 3.5–4.5 kg)
1 cup pineapple juice
½ cup brown sugar
¼ cup honey
2 tbsp Dijon mustard
2 tbsp melted butter
1 tsp garlic powder
½ tsp ground cinnamon
¼ tsp ground cloves (optional)
Pineapple rings and maraschino cherries (optional, for garnish)
For the Roasted Vegetables:
1 bunch fresh asparagus, trimmed
2 large sweet potatoes, peeled and cubed
2 tbsp olive oil
Salt and black pepper, to taste
1 tsp paprika
1 tsp dried thyme
Instructions
Preheat your oven to 325°F (165°C).
Place the spiral ham cut-side down in a roasting pan and cover loosely with foil.
In a saucepan, combine pineapple juice, brown sugar, honey, Dijon mustard, butter, garlic powder, cinnamon, and cloves. Simmer for 5–7 minutes until slightly thickened.
Brush a generous amount of glaze over the ham. Cover with foil and bake for about 10–12 minutes per pound, basting every 20 minutes.
During the final 20–30 minutes, remove the foil and brush with additional glaze to create a glossy, caramelized finish.
Toss the sweet potatoes with olive oil, paprika, thyme, salt, and pepper. Roast at 400°F (200°C) for 30–35 minutes.
Add the asparagus during the last 12–15 minutes of roasting, seasoning with olive oil, salt, and pepper.
Let the ham rest for 10 minutes before serving. Arrange with the roasted vegetables and spoon extra glaze over the sliced ham.
