Ingredients
4 boneless, skinless chicken breasts
½ cup basil pesto
1½ cups shredded mozzarella cheese
2 cups cherry tomatoes
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons grated Parmesan cheese (optional)
Fresh basil leaves, for garnish
Instructions
Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
Pat the chicken breasts dry and season both sides with salt, pepper, and Italian seasoning.
Arrange the chicken in the prepared baking dish. Spread a generous layer of basil pesto evenly over each piece.
Scatter the cherry tomatoes around the chicken. Drizzle them with olive oil and sprinkle with the minced garlic.
Bake for 20–25 minutes, or until the chicken is nearly cooked through.
Remove the dish from the oven and top each chicken breast with mozzarella cheese. Sprinkle with Parmesan cheese if using.
Return to the oven and bake for an additional 8–10 minutes, or until the cheese is melted, bubbly, and lightly golden, and the chicken reaches an internal temperature of 165°F (74°C).
Let the chicken rest for 5 minutes before serving. Garnish with fresh basil leaves.
