Flourless Lemon Greek Yogurt Cake

Ingredients (for a small 6-inch cake):

 

– 1 cup Greek yogurt (full-fat)

– 2 large eggs

– 1/3 cup honey or maple syrup

– Zest & juice of 1 lemon

– 1/2 cup almond flour

– 1 tsp baking powder

– Pinch of salt

 

 

 

Instructions:

 

1. Preheat oven to 180°C (350°F).

2. Mix yogurt, eggs, sweetener, lemon zest & juice until smooth.

3. Fold in almond flour, baking powder, and salt.

4. Pour into a greased pan and bake for 30–35 min until golden.

5. Cool, glaze with lemon-honey drizzle, and sprinkle zest.
