If you want a cozy, filling dinner without turning on the oven, this slow cooker chicken stew is perfect. Similar to classic beef stew but lighter and quicker thanks to tender chicken thighs, this recipe delivers juicy chicken, soft vegetables, and a rich, creamy broth—ideal for cold days or busy weeknights.

 

 

 

Ingredients

2 tablespoons olive oil

1½ pounds boneless, skinless chicken thighs, cut into 1-inch pieces

3 tablespoons all-purpose flour

1 teaspoon dried thyme

1 teaspoon dried rosemary

½ teaspoon salt (plus more for seasoning)

Black pepper, to taste

6 cloves garlic, minced

1 onion, diced

3 carrots, peeled and sliced

2 large potatoes (about 1 pound), cut into ½-inch cubes

3 cups chicken broth

1 bay leaf

½ cup milk

1 cup frozen green peas

 

 

 

Step-by-Step Instructions

1️⃣ Prep the Chicken

Place chicken on a cutting board and dice into 1-inch pieces.

Season generously with salt and black pepper.

2️⃣ Sear for Flavor

Heat olive oil in a large skillet over medium heat.

Add the chicken and cook for 4–5 minutes until browned on all sides.

You don’t need to cook it through—just sear to lock in flavor.

Tip: If your slow cooker has a removable stovetop-safe insert, you can brown the chicken directly in it.

3️⃣ Coat with Flour & Herbs

Transfer the seared chicken to the slow cooker.

Add:

Flour

Thyme

Rosemary

Salt

Stir well to coat the chicken evenly. This helps thicken the stew as it cooks.

4️⃣ Add the Vegetables

Add to the slow cooker:

Garlic

Onion

Carrots

Potatoes

Stir to combine.

Pour in the chicken broth and add the bay leaf.

5️⃣ Slow Cook

Cover and cook:

LOW: 7–8 hours

HIGH: 3–4 hours

The stew is ready when the chicken is tender and the potatoes are soft.

6️⃣ Finish the Stew

About 15 minutes before serving:

Stir in frozen peas

Add milk

Mix well

Cook on HIGH for 10–15 minutes until peas are warmed through.

Adjusting Thickness

Too thin? Mix 1 tablespoon flour with 2 tablespoons cold water, stir into stew, and cook 10–15 minutes more.

Too thick? Add a splash of chicken broth.

Use sweet potatoes instead of white potatoes.
