Cracker Barrel Broccoli Cheddar Chicken
Ingredients:
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
4 boneless, skinless chicken breasts
2 cups broccoli florets (steamed until tender)
1 can (10.5 oz) cream of chicken soup
1 cup shredded cheddar cheese (plus extra for topping)
½ cup milk
1 tablespoon butter (for greasing the baking dish)
Optional: crushed Ritz crackers or breadcrumbs for topping
Instructions:
1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish with butter or non-stick spray.
2. Season the chicken: Sprinkle both sides of the chicken breasts with salt, pepper, and garlic powder. Place them evenly in the prepared baking dish.
3. Prepare the sauce: In a medium bowl, mix together the cream of chicken soup, milk, and 1 cup of shredded cheddar cheese until smooth and creamy.
4. Assemble: Spread the steamed broccoli evenly over the chicken breasts. Then pour the cheese sauce mixture over the top, making sure all the chicken is covered.
5. Add toppings (optional): For extra crunch, sprinkle crushed Ritz crackers or breadcrumbs over the top, followed by a bit more shredded cheese.
6. Bake: Place in the preheated oven and bake for 30–35 minutes, or until the chicken is cooked through (internal temperature 165°F/74°C) and the cheese is bubbly and golden.
7. Serve: Let it rest for 5 minutes before serving. Pair it with rice, mashed potatoes, or a simple salad for a complete meal.
Tip:
For an extra cheesy flavor, mix in a little Monterey Jack or mozzarella with the cheddar.
