Golden Potato & Rice Bake with Cheese – A Comfort Food You’ll Crave!

 

 

 

This incredibly tasty potato and rice dish is so simple to make, yet so rich and satisfying that you’ll want to cook it again and again. Crispy on the outside, soft and cheesy on the inside — pure comfort food perfection!

INGREDIENTS:

200 g rice

1 kg potatoes

Salt, to taste

1 onion, finely chopped

30 g butter

1 carrot, grated

100 g mozzarella cheese

2 eggs

A handful of fresh parsley, chopped

Black pepper, to taste

Italian herbs (oregano, basil, or mixed seasoning)

Breadcrumbs (as needed)

Frying oil

 

 

 

 

INSTRUCTIONS:

Prepare the potatoes

Peel and boil the potatoes in salted water until soft. Mash them well and set aside.

Cook the rice

Rinse the rice and cook it in salted water until tender. Drain and let it cool slightly.

Sauté the vegetables

In a pan, melt the butter and sauté the chopped onion and grated carrot until soft and fragrant.

Mix everything together

In a large bowl, combine mashed potatoes, cooked rice, sautéed vegetables, eggs, mozzarella, parsley, salt, pepper, and Italian herbs. Mix well until fully combined.

Shape & coat

Form the mixture into patties or small cakes. Coat lightly with breadcrumbs.

Fry to perfection

Heat oil in a pan and fry until golden brown and crispy on both sides.

 

 

 

SERVING IDEA:
