Golden Parisian Croque Monsieur with Creamy Gruyère Mornay

 

 

 

A classic French café favorite—crispy, buttery bread layered with savory ham and melted Gruyère, finished with a velvety Mornay sauce that takes this sandwich to the next level. Rich, comforting, and irresistibly golden.

Ingredients

Yields: 2 Sandwiches

For the Mornay Sauce:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup whole milk

1/2 cup shredded Gruyère or Comté cheese

Pinch of nutmeg

Salt and freshly ground black pepper, to taste

For the Sandwich:

4 thick slices sourdough or brioche bread

4–6 slices high-quality deli ham

1 1/2 cups shredded Gruyère cheese (divided)

Dijon mustard, to taste

1 tablespoon butter (for toasting)

Fresh parsley, finely chopped (for garnish)

 

 

 

 

Instructions

1. Prepare the Mornay Sauce

In a small saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1–2 minutes until smooth and lightly cooked (do not brown). Gradually pour in the milk, whisking constantly to avoid lumps. Continue cooking until the sauce thickens and coats the back of a spoon. Remove from heat and stir in the Gruyère, nutmeg, salt, and pepper until silky and smooth. Set aside.

2. Assemble the Sandwiches

Lightly spread Dijon mustard on one side of each slice of bread. Layer ham evenly over two slices, then sprinkle a portion of the shredded Gruyère on top. Close the sandwiches with the remaining bread slices.

3. Toast to Perfection

In a skillet over medium heat, melt the butter. Place the sandwiches in the pan and toast for 2–3 minutes per side until golden brown and crisp.

4. Add the Signature Finish

Transfer the toasted sandwiches to a baking tray. Spoon a generous layer of the prepared Mornay sauce over each sandwich, then sprinkle the remaining Gruyère cheese on top.

5. Broil Until Bubbly

Place under a preheated broiler for 2–4 minutes, or until the top is melted, bubbly, and beautifully golden.

To Serve

Garnish with freshly chopped parsley and serve immediately while hot and gooey. Pair with a simple green salad or crispy fries for a true Parisian bistro experience.
