Cheesy Garden-Stuffed Zucchini Boats
These colorful stuffed zucchini boats are packed with fresh vegetables, melted cheese, and delicious savory flavor. Perfect for a light dinner, healthy lunch, or comforting side dish!
Ingredients
For the Zucchini Boats:
4 medium zucchinis, halved lengthwise and hollowed out
1/2 onion, finely chopped
1 carrot, grated
1 bell pepper, finely chopped
1/2 cup (60 g) mushrooms, chopped
2 cloves garlic, minced
1/2 cup (50 g) grated cheese (cheddar, mozzarella, or your favorite cheese)
2 tablespoons olive oil
Salt and black pepper, to taste
1 teaspoon Italian seasoning or dried oregano
Fresh parsley, chopped (for garnish)
Instructions
Prepare the Zucchini
Preheat the oven to 190°C (375°F).
Cut the zucchinis in half lengthwise and scoop out the center using a spoon to create “boats.” Lightly season with salt and place them on a baking tray.
Cook the Filling
Heat olive oil in a skillet over medium heat.
Sauté the onion for 2–3 minutes until soft. Add the carrot, bell pepper, mushrooms, and garlic. Cook for another 5–6 minutes until the vegetables are tender and fragrant.
Season the Mixture
Stir in salt, black pepper, and Italian seasoning. Cook for 1 more minute.
Stuff the Zucchini
Spoon the vegetable mixture evenly into the zucchini boats. Sprinkle the grated cheese generously over the top.
Bake
Bake for 20–25 minutes, or until the zucchinis are tender and the cheese is melted and golden.
Serve
Garnish with fresh parsley and serve warm. Enjoy as a main dish or alongside grilled chicken, rice, or salad.

For extra flavor, add cooked minced meat, shredded chicken, or a sprinkle of Parmesan cheese before baking.
