Ingredients
12 oz (340 g) egg noodles
1 lb (450 g) ground beef
8 oz (225 g) mushrooms, sliced
1 small onion, diced
2 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup
1 cup sour cream
1/2 cup beef broth
2 cups shredded cheddar cheese, divided
1 teaspoon Italian seasoning
1/2 teaspoon paprika
Salt and black pepper, to taste
1 tablespoon olive oil
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Cook the egg noodles according to the package instructions until just al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the onion and cook for 3–4 minutes until softened.
Stir in the garlic and mushrooms. Cook for another 4–5 minutes until the mushrooms are tender.
Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
Stir in the cream of mushroom soup, sour cream, beef broth, Italian seasoning, paprika, salt, and pepper. Mix until smooth and heated through.
Fold in the cooked noodles and 1 cup of the shredded cheddar cheese.
Transfer the mixture to the prepared baking dish and spread evenly.
Sprinkle the remaining cheese over the top.
Bake for 20–25 minutes, or until the cheese is melted, bubbly, and lightly golden.
Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley if desired.
