Ingredients
For the Base:
1 cup butter or margarine
1 cup brown sugar
½ cup white sugar
2 whole eggs
½ tsp iodized salt
1 tsp vanilla extract
2 cups oatmeal
1½ cups all-purpose flour
1 tsp baking powder
For the Cheesecake Filling:
1 cup cream cheese
½ cup white sugar
1 tsp vanilla extract
A pinch of salt
2 whole eggs
½ cup cream
1 tbsp all-purpose flour
For the Topping:
1 can blueberry pie filling
Instructions
1. Preheat oven to 150°C (300°F).
2. In a mixing bowl, cream together butter, brown sugar, and white sugar until light and fluffy.
3. Add eggs, salt, and vanilla, mixing well.
4. Stir in oatmeal, flour, and baking powder until fully combined.
5. Press half of the mixture into a greased baking pan to form the crust.
6. In a separate bowl, beat together all filling ingredients until smooth and creamy.
7. Pour the filling over the crust and spread evenly.
8. Spoon blueberry pie filling over the cream cheese layer.
9. Crumble the remaining oatmeal mixture on top.
10. Bake for 45–50 minutes, or until golden and set.
11. Let cool completely before slicing into bars.
