Jiggly Soufflé Pancake — Matcha Mist & Cloud Interior
It wobbles when it lands. The matcha cloud rises. The camera loves every second of it.
INGREDIENTS
Soufflé Pancake Batter
・ 3 large eggs, separated
・ 2 tbsp whole milk
・ 1 tsp vanilla extract
・ 40g / 1.4oz plain flour
・ ½ tsp baking powder
・ Pinch of fine salt
・ 3 tbsp caster sugar
・ ½ tsp cream of tartar
Matcha Mist
・ 2 tsp ceremonial grade matcha powder
・ 1 tsp powdered sugar
Whipped Cream
・ 150ml / 5fl oz heavy cream
・ 1 tbsp powdered sugar
・ ½ tsp vanilla extract
Finish
・ Extra matcha for dusting
・ Honey drizzle
・ Fresh strawberries (optional)
Airy. Trembling. A pale golden dome with a green mist settling over it. This is not a pancake. This is an event.
INSTRUCTIONS
Whipped Cream
1. Whip heavy cream, powdered sugar, and vanilla to soft peaks.
2. Refrigerate until serving.
The Batter
3. Separate eggs carefully. Not a single drop of yolk in the whites.
4. Whisk egg yolks, milk, and vanilla together until smooth.
5. Sift in flour, baking powder, and salt. Whisk until a smooth thick batter forms.
6. In a separate clean bowl, beat egg whites with cream of tartar on medium speed.
7. Add caster sugar gradually once the whites reach soft peaks.
8. Continue beating until stiff glossy peaks form. Do not over-beat.
9. Fold one third of the meringue into the yolk batter gently.
10. Add remaining meringue in two additions. Fold until just combined — keep the air in.
Cook
11. Heat a non-stick pan over the lowest possible heat.
12. Lightly grease with butter or neutral oil.
13. Spoon batter into tall mounds — two generous scoops per pancake.
14. Add 1 tbsp of water to the edge of the pan. Cover immediately with a lid.
15. Steam-cook for 5 minutes. The water creates steam that helps the pancake rise.
16. Add another tbsp of water. Cover and cook a further 4–5 minutes.
17. Flip very gently with a wide spatula. Cover and cook 3–4 minutes more.
18. The pancake should stand tall, golden on both sides, and wobble when moved.
Serve
19. Slide carefully onto a plate immediately.
20. Mix matcha and powdered sugar together in a small bowl.
21. Hold a fine sieve above the pancake. Tap gently.
22. Watch the green cloud rise and settle over the dome.
23. Add whipped cream alongside. Drizzle honey. Serve immediately.
