No-Bake Lemon Coconut Fridge Slice

Creamy, tangy, and refreshing – no oven needed!

Ingredients

Base

250 g plain sweet biscuits (Marie, Digestive, or similar), finely crushed

1 cup (80 g) desiccated coconut

125 g unsalted butter

1 can (395 g) sweetened condensed milk

Zest of 2 lemons (finely grated)

2 tablespoons fresh lemon juice

Lemon Topping

1½ cups (180 g) icing sugar, sifted

2 tablespoons fresh lemon juice

1 tablespoon butter, softened

2 tablespoons desiccated coconut (for sprinkling)

 

 

 

Instructions

1️⃣ Prepare the Pan

Line a 20 × 20 cm (8 × 8 inch) square pan with baking paper, leaving some overhang for easy removal.

Set aside.

 

 

2️⃣ Make the Biscuit Base

Place the crushed biscuits and desiccated coconut into a large mixing bowl.

Mix well to combine evenly.

 

 

3️⃣ Melt the Butter

In a small saucepan over low heat, melt the butter gently.

Once melted, remove from heat.

 

 

4️⃣ Combine the Filling

Add the sweetened condensed milk, lemon zest, and lemon juice to the melted butter.

Stir until smooth and fully combined.

 

 

5️⃣ Mix Everything Together

Pour the lemon mixture into the biscuit mixture.

Stir thoroughly until all crumbs are coated and the mixture looks moist and cohesive.

 

 

6️⃣ Press into the Pan

Spoon the mixture into the prepared pan.

Press down firmly using the back of a spoon or a flat glass to create an even, compact base.

Place in the refrigerator while you prepare the topping.

7️⃣ Make the Lemon Glaze

In a bowl, combine icing sugar, lemon juice, and softened butter.

Mix until smooth and spreadable.

If too thick, add ½ teaspoon lemon juice at a time.

If too thin, add a little extra icing sugar.

 

 

 

8️⃣ Spread & Finish

Spread the lemon topping evenly over the chilled base.

Sprinkle desiccated coconut over the top for decoration.

 

 

 

9️⃣ Chill & Set

Refrigerate for at least 2–3 hours, or until fully firm.

For best texture, chill overnight.

 

 

To Serve

Lift the slice out using the baking paper.

Cut into 16 squares with a sharp knife (wipe blade between cuts for clean edges).

 

 

Tips & Variations

Extra lemony: Add more zest or a few drops of lemon extract.

Crunchy base: Mix in crushed almonds or macadamias.

Dairy-free option: Use plant-based butter and coconut condensed milk.

Freezer-friendly: Store in the freezer and thaw slightly before serving.
