Melted Heart Garlic Cheese Rolls

INGREDIENTS

 

Roasted Garlic Butter

 

1 whole head garlic

 

1 pinch salt

 

3 tbsp olive oil

 

50g softened butter

 

1 tbsp fresh parsley, chopped

 

Dough

 

90g warm milk

 

7g active dry yeast

 

1 tbsp honey

 

200g all-purpose flour

 

50g bread flour

 

20g milk powder (optional)

 

25g softened butter

 

2 egg yolks

 

1.5 tsp salt

 

1 tbsp sugar

 

Filling & Finish

 

200g shredded mozzarella cheese

 

1 egg (for egg wash)

 

INSTRUCTIONS

 

Slice the top off a garlic head, place in a ramekin, drizzle with oil & salt.

 

Cover with foil and roast at 160°C (320°F) for 2 hours until golden and soft.

 

Mix roasted garlic, butter, 2 tbsp garlic oil, and parsley until smooth. Set aside.

 

Combine warm milk, yeast, and honey. Let sit 10 min until foamy.

 

In a bowl, mix flours, milk powder, sugar, salt, butter, and egg yolks.

 

Add yeast mixture and knead 15–20 min until elastic and smooth.

 

Let rise in greased bowl, covered, for 90 min until doubled.

 

Roll dough into a rectangle (1/8″ thick), spread garlic butter, add mozzarella.

 

Roll into a log and slice into 6 rolls. Proof 30 more minutes on a tray.

 

Brush with egg wash, bake at 175°C (350°F) for 20–25 min until golden.

 

Brush with remaining garlic butter, sprinkle parsley, and serve warm.
