Pumpkin Pie French Toast
Ingredients:
- 4 large eggs
- 1 cup milk
- 1/2 cup canned pumpkin puree
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 8 slices of thick-cut bread (such as brioche or challah)
- Butter or oil for cooking
- Powdered sugar (optional)
- Maple syrup (for serving)
- Whipped cream (optional)
Instructions:
- Make the Pumpkin Mixture:
In a large bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla, cinnamon, nutmeg, ginger, and salt until smooth and well combined.
- Prepare the Bread:
Heat a skillet or griddle over medium heat and add a little butter or oil. Dip each bread slice into the pumpkin mixture, allowing it to soak briefly on both sides. Shake off any excess liquid before placing the bread onto the skillet. - Cook the French Toast:
Cook the slices for 2–3 minutes per side, or until golden brown and fully cooked. Adjust the heat as necessary to prevent burning. - Serve:
Serve the French toast warm. Dust with powdered sugar if desired, and top with maple syrup and whipped cream for extra indulgence.
