Peach Cobbler Puff Pastry Bake

 

A crisp, buttery puff pastry layered over sweet, juicy peaches—perfect for dessert any time of year!

 

 

 

Ingredients

For the Peach Filling

3–4 ripe peaches, peeled, pitted, and sliced (or 2 cups canned peaches, drained)

1/4 cup granulated sugar (adjust depending on sweetness of peaches)

1 tbsp cornstarch (for thickening)

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg (optional, adds warmth)

1 tsp fresh lemon juice

1 tsp vanilla extract (optional, enhances peach flavor)

For the Puff Pastry

1 sheet puff pastry (store-bought, thawed if frozen)

1 egg (beaten, for egg wash, optional)

1 tbsp unsalted butter, cut into small pieces (optional, for dotting on top)

For Serving (Optional)

Vanilla ice cream

Whipped cream

Toasted almond slices (optional, for crunch)

Honey drizzle (optional)

 

 

 

Instructions

1️⃣ Prepare the Peach Filling

Preheat your oven to 375°F (190°C).

In a medium bowl, combine: peaches, sugar, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla (if using).

Gently toss to coat the peaches evenly. Let the mixture sit for 5–10 minutes—the cornstarch will start to thicken the juices slightly.

Tip: If your peaches are very juicy, you can add 1–2 tsp more cornstarch to avoid a watery filling.

2️⃣ Prepare the Puff Pastry

Lightly flour your work surface and unroll the puff pastry sheet.

Trim or shape it to fit your baking dish (a 9×9-inch square, 8×8-inch, or round 9-inch dish works well).

Lay the puff pastry in the dish, pressing lightly along the edges. Fold over any excess edges for a neat border.

Tip: Keep the puff pastry cold until just before baking—this ensures maximum puff and flakiness.

3️⃣ Assemble the Cobbler

Pour the peach mixture into the center of the puff pastry, leaving a small border around the edges.

Optional: Dot the top of the peaches with small pieces of butter for extra richness.

4️⃣ Egg Wash (Optional but Recommended)

Beat 1 egg with 1 tbsp water or milk.

Brush the edges of the puff pastry lightly with the egg wash.

This creates a golden, shiny, and crisp crust.

Tip: Avoid brushing the peaches themselves, or the egg wash can get sticky.

5️⃣ Bake

Place the dish on the middle rack of your preheated oven.

Bake for 25–30 minutes, or until:

Puff pastry is golden brown and puffed

Peach filling is bubbling

If the edges brown too quickly, loosely cover with foil halfway through baking.

 

 

 

6️⃣ Cool & Serve

Let the cobbler cool for 5–10 minutes—this helps the filling set slightly.

Serve warm with:

Optional toppings: toasted almonds or a drizzle of honey

Extra Tips & Variations

Spice it up: Add a pinch of ground ginger or cardamom for a warm flavor twist.

Fruit swaps: Try plums, apples, or mixed berries for different versions.

Make it rustic: Instead of a neat puff pastry base, cut strips and make a lattice top.

Sweet crunch: Sprinkle a little turbinado sugar on top of the puff pastry before baking for extra caramelized crunch.
