Ingredients

2 cups cooked shredded chicken

8 soft flour tortillas

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

1 can enchilada sauce

1 cup sour cream

1 small onion, finely chopped

2 garlic cloves, minced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped

Optional Toppings

Sliced jalapeños

Diced avocado

Fresh cilantro

Lime wedges

Extra sour cream

 

 

 

Instructions

Preheat your oven to 375°F (190°C). Lightly grease a large baking dish.

Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until soft and fragrant. Stir in the garlic and cook for about 1 minute.

Add the shredded chicken, cumin, paprika, salt, and black pepper. Mix well until the chicken is evenly coated with seasoning.

In a medium bowl, combine the sour cream with half of the enchilada sauce until smooth and creamy.

Fill each tortilla with the chicken mixture and a generous sprinkle of cheddar and mozzarella cheese. Roll tightly.

Arrange the enchiladas seam-side down in the baking dish.

Pour the remaining enchilada sauce evenly over the top.

Sprinkle the remaining cheese generously over the enchiladas.

Bake for 20–25 minutes until the cheese is melted, bubbly, and lightly golden.

Let rest for 5 minutes before serving. Garnish with fresh parsley and your favorite toppings.
