Ritz Cracker Christmas Cookies
Ingredients:
– 40 Ritz crackers (or similar buttery round crackers)
– 1 cup creamy peanut butter
– 1 cup white chocolate chips or melting wafers
– 1 cup milk chocolate chips or melting wafers
– Sprinkles, crushed candy canes, or holiday decorations
Directions:
1. Line a baking sheet with parchment paper or wax paper.
2. Spread a thin layer of creamy peanut butter evenly over one side of each Ritz cracker.
3. Place half of the peanut butter-covered crackers on the prepared baking sheet.
4. Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
5. Spoon or pipe melted white chocolate onto the peanut butter side of the crackers on the baking sheet, spreading evenly.
6. Top with the remaining crackers, peanut butter side down, to form sandwich cookies.
7. Melt the milk chocolate chips in the same manner until smooth.
8. Dip each sandwich cookie halfway into the melted milk chocolate, allowing excess to drip off.
9. Immediately decorate with sprinkles, crushed candy canes, or holiday decorations before the chocolate sets.
10. Place the dipped cookies back on the parchment-lined baking sheet and refrigerate for 15-20 minutes until the chocolate is firm.
