If you have milk and eggs in your kitchen, you’re already halfway to making the softest homemade bread rolls imaginable. My grandmother taught me that the secret to incredibly fluffy bread is warm milk, a little patience, and plenty of love. Ingredients

320 ml warm milk

1 large egg

30 g sugar (2 tablespoons)

5 g dry yeast (about 1½ teaspoons)

490 g all-purpose flour (about 3½ cups)

5 g salt (1 teaspoon)

30 g melted butter

Instructions

Step 1: Activate the Yeast

In a large mixing bowl, combine the warm milk, egg, sugar, and dry yeast. Whisk well until everything is fully incorporated. Let the mixture sit for 5–10 minutes until slightly foamy.

Step 2: Make the Dough

Add the flour and salt to the bowl. Using a spatula or wooden spoon, mix until a shaggy dough forms.

Step 3: Add the Butter

Pour in the melted butter and continue mixing until the dough begins to come together.

Step 4: Knead

Transfer the dough to a lightly floured surface and knead for 8–10 minutes, or until it becomes smooth, soft, and no longer sticky. If needed, add a small amount of flour, but avoid adding too much to keep the bread tender.

 

 

 

 

Step 5: First Rise

Place the dough in a lightly greased bowl. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm place for 1 to 1½ hours, or until doubled in size.

Step 6: Shape the Rolls

Punch down the risen dough and divide it into 12 equal portions. Shape each piece into a smooth ball and place them in a greased baking dish or on a parchment-lined baking sheet.

Step 7: Second Rise

Cover the rolls and let them rise again for 30–40 minutes, until puffy and nearly doubled.

Step 8: Bake

Preheat your oven to 180°C (350°F). Bake the rolls for 18–22 minutes, or until beautifully golden brown on top.

Step 9: Finish and Serve

For an extra-soft crust, brush the hot rolls with a little melted butter immediately after baking. Allow them to cool slightly before serving.

Tips for Perfect Rolls

Make sure the milk is warm, not hot, to avoid killing the yeast.

For richer flavor, replace part of the milk with heavy cream.

These rolls freeze beautifully and can be reheated whenever needed.

Add sesame seeds, poppy seeds, or a light egg wash before baking for a bakery-style finish.
